Chicken Masala Roast

Ingredients:
  • Chicken – 1 kg
  • Onion – 3 (big)
  • Tomatoes – 3 (big)
  • Garam masala – 2 tsp
  • Ginger garlic paste - 3 tsp
  • Pepper powder – 1 tsp
  • Chilly powder – 2 tsp
  • Vinegar – 2 tbsp
  • Salt – to taste
  • Turmeric – one pinch
  • Oil – 2 tbsp
  • Curry leaves - few
Method:
Make a paste of onion and tomatoes. Add all the other ingredients (from 4-10) to the chicken and mix well. (Additional spice and chilly can be added to suit your taste) Marinate the chicken for at least 1 hour. In a frying pan add oil and add the chicken to it. Cover and allow the chicken to soften. When the chicken is cooked and soft, leave the frying pan open and allow the gravy to thicken. In this stage keep stirring so that the masala does not get burnt to the bottom of the vessel. Keep stirring till there is only some thick gravy coating the chicken. Fry mustard, some curry leaves and 1 sliced onion in another pan and add it over the chicken for extra flavor.
